Rooftop Concert Series

It's the first Friday of the month and if you're in Provo the Rooftop Concert Series is where you want to be. From May to September since 2010, the Provo Rooftop Concert Series has been putting on FREE concerts with awesome Utah bands.  It can't get any better than this for Rodney and I. We love music and exploring Cities. Provo has so much to offer and this concert is a great excuse to get out and have fun in the Provo area. It's crazy to see how much this concert series has grown. Nowadays there are too many attendees to have the concert on the roof.  The name was kept but the concert is now on the street.

The Rooftop Concert Series is located right in the middle of Center street. This means it right next to a ton of wonderful places to grab a bite. Besides being located right in the heart of Downtown Provo, the concert series offers a few informational booths where you can win prices.  Rodney and I stopped in to talk to Provo City power for a bit and we left with a fun little fidget spinner, they seem to be all the rage right now. You can also win a ride from them to view the concert from above. How exciting would that be?

For Rodney and I this was a fun night out on the town.  What else do you need in life but good company and good music?  Another great perk about this concert was we could take our furry friend with us!

Pikliz: A Haitian Coleslaw

Rodney and I came back from the holidays craving what our good friend Carline calls “Pikliz” It is sort of like a spicy Haitian coleslaw. Carline is from Haiti and she introduced us to Pikliz when we started cooking dinners together a while back. We came across a type of Pikliz in Belize when we went to visit and it made us crave it even more. Carline was kind enough to come over and help us make a batch!  I can not thank her enough for bringing such spicy deliciousness into our lives. We have become accustomed to having pikliz in the fridge when we are in town. So when we knew we were going to settle down for a little bit before our next trip it became a priority to make some. We couldn’t wait to get into the kitchen to make some more. BUT there is a catch with Pikliz!! In order to get all the flavor-y goodness you want, you must wait for it. Carline has always suggested at least 7 days, that’s a whole week! I normally don’t mind waiting but you can eat it right away too.  Just keep in mind the flavor will develop the more you let it sit in the fridge.

Our favorite thing about pikliz is it has so much flavor it can stand on its own or it can be mixed with almost anything to add flavor. We put pikliz on everything!  We mix it into soups, add it to sandwiches. At times we even eat it by itself. We both enjoy spicy foods and because of the addition of Habaneros, Pikliz has a wonderful kick to it. If you’re not a huge fan of spicy food we’d suggest putting in fewer habaneros. Play around a little with the amount of spice you like. Warning, If you get rid of the habaneros all together it won’t taste much like pikliz anymore - but hey, maybe you’d like it just like that. You might even realize you want more habaneros!

Pikliz is no small feat. Although, it is not a hard item to make it can be a time consuming one. This recipe is for roughly two to three large jars.  Once you’ve gathered everything you need you have to slice and chop and mince everything. This is the part that takes the longest because you're going to want really thin slices. Also, make sure to wear gloves when cutting up the habaneros.

Here is the important part. After you're done cutting everything up to your liking you're going to want to combine the Vinegar and Lime together first and then add the salt and pepper to taste. This part is hard to measure. I'd say we used enough salt that you could really taste it in the vinegar. The salt will be soaked up by all the other ingredients.  It might be too salty at first but it won't taste that salty once you add everything else. You can always add salt later but the best time to add the salt is right in the vinegar and lime.

Next, you're going to add everything to the lime and Vinegar mixture slowly. Add some of the cabbage then the carrots. Maybe a little more cabbage, and then the habaneros and cilantro.  Start just slowly adding and mixing until all of your ingredients are in the lime and vinegar. We used our gloves to mix everything together but you can surely use a spoon.  Once everything is added and mixed well you'll spoon the Pikliz into a glass jar and allow it to sit for about a week.

One of our favorite snacks to eat is simply placing the Pikliz on a tostada or maybe try it with fried plantains. Hope you enjoyed this recipe as much as we do. We'd love to hear how you add Pikliz to your menu. Let me know in the comments below!

Ingredients

  • 1 head of thinly shredded cabbage
  • 2 cups of shredded carrots
  • 1/4 cup chopped cilantro
  • 1 small white onion thinly sliced
  • 2 tbsp salt*
  • Vinegar*
  • Juice of 6-7 Limes
  • pepper to taste
  • 1/3 cup of sliced habanero

*Notes: Use enough vinegar to cover the ingredients in an air tight container. Start with 2tbsp of salt, add more if necessary when adding to the lime and vinegar.

Instructions

  1. Pour vinegar and lime juice into a large bowl.  Add salt and pepper to taste.
  2. slowly add the rest of the ingredients into the vinegar and lime juice, mix.
  3. Store in jar, refrigerate for a few day.

 

 

Extra: Items that may also work well in this mixture are garlic cloves, bell peppers, scallions, bonnet peppers and peppercorn.

Unfortunately, because of the craziness associated with our wedding day, we forgot to pack our cameras. Luckily we didn't forget our phones! Here are a few of the fun memories we were able to capture while out and about in Hawaii.  The quality here might not be the best (a bit grainy) but It will have to do.

Lights In The Sky

We arrived in Hawaii sometime around 5 or 6 giving us just enough time to check into our hotel and go for a casual walk around town. We ended up going to one of the nearest food joints and grabbed some dinner. We both got poke bowls, yum! We then just turned around and plopped ourselves on the side of the water with the rest of Honolulu to see the sky light up with fireworks.

We ate a ton of shrimp while we were in Hawaii, couldn't get enough. But we did eat a few other things, you know, all the food items you should try while you're in Hawaii. But our all time favorite was trying all the shrimp we could find.  If we had a choice, we always picked spicy!  Can you guess the places we went? Ramen, Pho, Matcha - So good.

The Highlights

So here are a few pictures of our honeymoon. Just lots of sightseeing and relaxing. We had the luxury traveling the island, we stayed right across from the water at North Shore for a while and it was glorious. Hawaii is a great place for snorkeling with turtles, taking a sunset sailing cruise, and surfing, we did it all. I think without our cameras we were able to keep a little bit of privacy. After all, this was our honeymoon.

We wanted to write a little thank you here to Mikes surf school for guiding us onto some fun waves while we were visiting the north shore.  It was my (Kim's) first time and I was intimidated, to say the least. They put my mind at ease and made my first experience on a board memorable and exciting. I would recommend them to anyone visiting the north shore looking to catch some waves in the sun. Thanks, Mike! We hope to see you out on the water again sometime. The next few pictures are from the talented Sky. She took some fun photos for us while we were out in the water. What a day this was. We are still talking about it like it was yesterday. We are so overjoyed that so many friends and family were able to make the day.  We expected a small intimate wedding considering we knew only 4 people in Arizona when we decided to have the wedding take place there. How fortunate of us that so many made it out of the way to have a grand ole' time with us. So exciting to have so much love and support from everyone.  We LOVE you all!

Un-Belize-able

we decided to get away for a bit before heading back to the states to do all the many things you need to do before you get married. These next ten days of relaxation and fun were much-needed. Rodney and I flew into Belize City with some of the most awesome people you could ever travel with, Jenda and Ethan. They are also the talented artist behind most of the beautiful photos in this post. All of the days in Belize sort of blur together so I'm going to talk about the trip in order of events instead.

Cave Tubing in Belize

April - Plans unexpected

Honestly, we had made very little plans for this trip beyond hotel and transportation. We left this trip open to suggestion. We arrived in Belize before lunch and had the whole day to play. We all piled into a van with our driver, Marco, and that's where our adventure began. Marco was amazingly helpful when it came to places to eat, where to visit, and even how and when. He was bringing us from Belize City to the Western city of San Ignacio.  It's a bit of a drive and we were unsure what we would be doing when we got there except checking into our hotel. Marco mentioned that for an extra fee could bring us to a popular cave tubing area and arrange a tour for us. We accepted, Cave tubing sounded awesome, and relaxing, considering we just got off a plane.

We met up with our guide, grabbed our gear and headed up the trail. As we walked up the trail to the river we were informed about a lot of things. Some of those things were how poisonous the surrounding forest could be. So much so that if one water droplet fell from one of the poisonous trees it could cause skin damage and irritation. needless to say, we touched nothing.

Once we got to the river we looked around and swam in the river a bit before we got in our tubes to slowly descend into the dark caves with only a headlamp to light the way. Ethan took a minute here to take some awesome pictures of the surrounding area.

We didn't take any photos of the actual tubing. You're going to have to use your imagination here to visualize a huge pitch black cave system that goes for miles. Stalactites hanging like intricate icicles from the roof, a slow current of refreshing water escorting us down stream, as we were accompanied by a very friendly and knowledgeable guide telling us all about cenotes and the Mayan people.

This tour was a great way to familiarize ourselves with Belize. I'd definitely recommend looking up a tour if you're traveling to Belize, just avoid any of the poisonous plants!

A Walk Through Cahal Pech

Part two

Because we had the amazing advantage of having fantastic photographers with us on this trip to Belize. We decided to take advantage of the circumstances and take some photos at one of the Mayan sites near the city of San Ignacio, Cahal Pech.  This place is beautiful to just walk around and explore. Here are some of our photos.

We Drive East

To the Beach

We only stayed a few days in San Ignacio.  We wanted to make sure to visit the beach. We could have stayed the entire time inland doing all sorts of amazing things but we decided to packed our bags and met Marco (yes, the same driver, he was awesome) and made our way to Palencia. We knew we wanted to see at least one more Mayan ruin before we left so we had Marco take us to Xunantunich. We make the short hike up the hill and into the Mayan site. It was Extremely hot out but worth the look around. (the next few photos are from my phone).

We finished up our site seeing at Xunantunich and Marco had another brilliant idea. He suggested we take a moment to visit the inland blue hole on our way to Palencia. His first idea was great, so why not trust his second. We all arrived at St. Herman's Blue Hole National Park and walked our way down the trail to a 25-foot deep sapphire blue sinkhole.  It was extremely refreshing after being in the extreme heat at Xunantunich. It was a great place to cool off in the heat. We didn't stay too long because we still needed to drive all the way to Palencia and check in at our next hotel.

Rodney and I love spending time by the water.  If we go anywhere we thing, can we swim, can we snorkel, can we surf, can we sail? Well, Belize is definitely a snorkel, swim kind of place, and if you're lucky enough a place to sail. Palencia, not so much as other places for surfing and snorkeling but being by the water is wonderful and calming. We were fortunate enough to be only a few feet from the water. Literally, we could throw a rock into the ocean from our front porch. It was heaven. We spent the remaining time here in Palencia, soaking up the sun.

Well, that about sums up our Belize adventure. We had a wonderful time relaxing and having a blast in the heat.  We took the last day and spent it in Belize City where we walked around and saw the city. Managed to take a few pictures, eat some good food, and get a good night sleep before we headed off to the airport in the morning.  Thanks for having us Belize. We can't wait to get back. Hopefully next time we will head over to the islands and do some swimming and snorkeling. Until next time!
