One of the joys we find in traveling is finding delicious places to have a meal. On one of our last days before leaving Arizona we found our way to Thuan Kieu Restaurant , which is connected directly to Lee Lee International Supermarket, and you should take a gander at if you have spare time. It's huge! We picked up some coconut water, seaweed chips, and Shiracha peas for our road trip to Texas. This Vietnamese Resturant is causal, nothing you have to get dressed up for; good thing too because we were on our way out of town when we stopped in to get a bite. The tables are capable of fitting large families, The service was pretty good, and the food came out fast. Not to mention what we ordered was pretty good.  Someone suggested getting the Pho with tripe; I'm going to have to keep this in mind for next time. And yes, we both think this place is worthy of a "next time."

Here is what we ordered.

Drink: Water - can't go wrong with a nice cold glass of water.

Appetizer: #2 Phan Goi Cuon (freshly sliced shrimp and pork spring rolls) Comes with 2 spring rolls and served with a peanut sauce.

Main Dish: #A8 Pho Ga (Noodle soup with Chicken) We ordered the small and Regular size of this meal to see how big a difference it was. It happened to be perfect for both of us. Rodney took the Regular and I took the small.

Main Dish Part 2: #74 and #77 (vermicelli noodles) Although we did not order these meals we did taste them.  We thought they would be worth mentioning because they tasted great. I personally enjoyed #77 it was ordered with grilled sliced beef.  If you like vermicelli noodles I'd say this place has a good variety to pick from.

What do people do the day after Thanksgiving? Shop Back Friday, eat tons of leftovers, or maybe put up a Christmas tree. Yea, that sounds right. Except for this year, we mixed it up.  We made leftover turkey sandwiches, skipped the shopping and went right to the top of Picacho Peak.  Rodney and I have been wanting to do this hike for a while now.  The first time we started this hike we got a bit distracted (as in there was a proposal and we got engaged...but that's another story for another day).  Finally, we are back in Arizona with some time to go on a hike. We took the drive to the trailhead and we were on our way.  The park is nicely maintained.  You can camp here, walk a few trails, have a picnic. Its just perfect (but I might be a little bias, After all, I did get engaged here).

located in Picacho Peak State Park Arizona, Picacho Peak is a 1,500-foot peak with a fantastic 360 degree few from the top.  There are two ways to reach the top. Sunset Vista Trail and Hunter TrailWe took the latter. 

We hiking this 2.0 mile (4.0 miles round trip) trail in the morning.  I'd hate to be taking a stroll in the middle of the day with Arizona's heat, let alone scrambling up and down rocks, even if it is winter. Yes, this hike has loose rocks and wires to hold onto as you move along the trail there was a bit of scrambling going on. A good pair of shoes is a lifesaver and gloves are recommended. Some of these passages are not for the faint of heart.

Make sure to bring tons of water, you're going to want it. A camelback would probably be best considering some places you might want two hands available.  Deciding to pack those turkey sandwiches was also a great idea. I think the summit made for a good picnic stop. The view of the surrounding desert is amazing. Perfect place to rest replenish before heading back down. (Just putting it out there: this hike goes up and then it goes down before it goes back up. The picture below is indeed us on our way back).

This last weekend we accompanied some friends of ours to a local tea house in SLC. We all went on a whim, deciding we were hungry and rather than leave Salt Lake City with an empty stomach we went to Hong Kong Tea House.  It was wonderful. If you enjoy a more traditional Chinese cuisine, this could be the place for you. Hong Kong Tea House is known for their Dim Sum; available for lunch or dinner. Here is what we ordered:

Drink: House Special - I was told the tea they had brought was called the Dragon Well. I can only say I was thoroughly satisfied. I think I drank 3 pots all by myself. This tea was $3.00 a person.

Chef's Specials: All of these specials were brought out to us as they were made.  Give or take your appetite, what we ordered was enough to feed the four of us at the table. I think we struggled to finish off the last few items. I personally enjoyed the Pan Fried Stuffed Mushrooms and the Sticky Rice in Lotus Leaf.  Rodney enjoyed the Steamed Beef Balls the most.  Neither of us had any complaints. Each plate was between $2.50-$4.50 - Pretty good price!

Walk On The Ranch

Rodney and I always have the most fun just going out for walks and enjoying the scenery.  Shadow was in heaven wandering outside. We partially let him lead the way. I think the cows were curious of him the whole time. This post is us just hanging out with our dog going for a long walk having fun in the sun. It's always so peaceful out away from the city.

We don't go many places without our shadow. He keeps us company after long days and loves to go outside and explore. Crystal Beach has been a great place for him to get out and have some fun in the sun. We love our little travel companion.

Rodney and I both enjoy going out on the town and finding good places to eat. On Account of being in Texas for a while, we decided to go out over the weekend when we came into Salt Lake City. We Particularly enjoy Thai food and thought of going to get some spicy deliciousness. Here is what we ended up getting at Sawadee's.

Drink: Thai Iced tea - I always seem to get one of these when we head to a Thai restaurant.

Appetizer: Crab Sawadee (Cream Cheese Wontons) This plate comes with 8 pieces. Served with sweet and sour sauce

Main Dish: Thai Basil Stir Fried (Pad Gra Prow) This dish Rodney loves with Chicken. It's it such a large meal that it could be shared between 2-3 people. We definitely had leftovers.  This item isn't extremely spicy but it does have a kick to it

*Note: Rodney mentioned to me that it might be a 4 on a scale of 1-5... so maybe I'm off a little. If you're not a spice lover, maybe, ask your server to clarify.

Homecoming Parade

There isn't always a lot to do in a small town but we happened to be around when Buna was celebrating its HOMECOMING PARADE! woot!  haha.  Everyone in town was out to watch the floats and catch the candy.  Rodney might be used to Buna's small-town feel but I have never seen this place so lively. Here's to all the future generations. Live it up, everyone!

Unfortunately, most of these pictures have a bit of a blur to them. We didn't know we would be out watching all the cheerleaders, football players and band members float past us.  It seemed like such a special moment in the community that we decided it warranted a post.

Relaxing in Crystal Beach

Crystal Beach is one of those places Rodney and I enjoy going to for a relaxing weekend.  We decided to do a road trip (We're probably crazy for driving all the way from Utah) there is something quite fun about driving and it adds something extra to the experience viewing the sites on the way.  Rodney tends to work as I listen to podcasts on the way. It was a long drive, something like 23hrs. But it was worth it to come down (The main reason to drive to Texas was to help others in the aftermath of Hurricane Harvey - we took some time to ourselves to rest and relax) We stayed at 1 Amazing View, which is a beautiful place by the water. The view is remarkable and the house is decorated meticulously to give you the relaxing feeling you want to have at the beach.

Rooftop Concert Series

It's the first Friday of the month and if you're in Provo the Rooftop Concert Series is where you want to be. From May to September since 2010, the Provo Rooftop Concert Series has been putting on FREE concerts with awesome Utah bands.  It can't get any better than this for Rodney and I. We love music and exploring Cities. Provo has so much to offer and this concert is a great excuse to get out and have fun in the Provo area. It's crazy to see how much this concert series has grown. Nowadays there are too many attendees to have the concert on the roof.  The name was kept but the concert is now on the street.

The Rooftop Concert Series is located right in the middle of Center street. This means it right next to a ton of wonderful places to grab a bite. Besides being located right in the heart of Downtown Provo, the concert series offers a few informational booths where you can win prices.  Rodney and I stopped in to talk to Provo City power for a bit and we left with a fun little fidget spinner, they seem to be all the rage right now. You can also win a ride from them to view the concert from above. How exciting would that be?

For Rodney and I this was a fun night out on the town.  What else do you need in life but good company and good music?  Another great perk about this concert was we could take our furry friend with us!

Unfortunately, because of the craziness associated with our wedding day, we forgot to pack our cameras. Luckily we didn't forget our phones! Here are a few of the fun memories we were able to capture while out and about in Hawaii.  The quality here might not be the best (a bit grainy) but It will have to do.

Lights In The Sky

We arrived in Hawaii sometime around 5 or 6 giving us just enough time to check into our hotel and go for a casual walk around town. We ended up going to one of the nearest food joints and grabbed some dinner. We both got poke bowls, yum! We then just turned around and plopped ourselves on the side of the water with the rest of Honolulu to see the sky light up with fireworks.

We ate a ton of shrimp while we were in Hawaii, couldn't get enough. But we did eat a few other things, you know, all the food items you should try while you're in Hawaii. But our all time favorite was trying all the shrimp we could find.  If we had a choice, we always picked spicy!  Can you guess the places we went? Ramen, Pho, Matcha - So good.

The Highlights

So here are a few pictures of our honeymoon. Just lots of sightseeing and relaxing. We had the luxury traveling the island, we stayed right across from the water at North Shore for a while and it was glorious. Hawaii is a great place for snorkeling with turtles, taking a sunset sailing cruise, and surfing, we did it all. I think without our cameras we were able to keep a little bit of privacy. After all, this was our honeymoon.

One post is not enough for all the things we packed into 10 days. Our next adventure we will break down for everyone. But this one is just all mushy gushy, lovey dovey stuff. We wanted to write a little thank you here to Mikes surf school for guiding us onto some fun waves while we were visiting the north shore.  It was my (Kim's) first time and I was intimidated, to say the least. They put my mind at ease and made my first experience on a board memorable and exciting. I would recommend them to anyone visiting the north shore looking to catch some waves in the sun. Thanks, Mike! We hope to see you out on the water again sometime. The next few pictures are from the talented Sky. She took some fun photos for us while we were out in the water. What a day this was. We are still talking about it like it was yesterday. We are so overjoyed that so many friends and family were able to make the day.  We expected a small intimate wedding considering we knew only 4 people in Arizona when we decided to have the wedding take place there. How fortunate of us that so many made it out of the way to have a grand ole' time with us. So exciting to have so much love and support from everyone.  We LOVE you all!
